I discovered this delicious dish in the Mekong delta in southern Vietnam while staying with Yen’s family. It is quite easy to make and a very nice side dish with rice and some vegetables.
What you need:
- 2-3 stems of fresh lemongrass
 - 1 block of fried tofu
 - salt, sugar, vegetable seasoning, water
 
Step by Step:
- wash the lemongrass and slice very thinly so you end up with lots of rings
 - cut the block of fried tofu in medium sized flat peices
 - heat up tofu in wok with some water
 - add salt, sugar, vegetable seasoning – this is a bit up to you – if somebody in Vietnam serves this to you it will have MSG in it ;-((
 - add lemongrass
 - fry until lemongrass start to become golden brown on thinner pieces
 - Voila!
